Post Oak: The Standard for Texas Barbecue

Post oak is the wood that central Texas barbecue is built on. The smoke is clean and balanced, never sharp, which is why it is the popular choice for competition pits and backyard smokers alike. It puts out steady heat and a long, even burn, so a load of post oak splits carries a brisket through a twelve-hour cook without spiking or dying out. These splits are a versatile wood that handle steaks, chicken, pork chops, and ribs with the same easy hand, and the mild smoke lets the meat lead instead of getting buried.

Post oak is a dense hardwood, so it burns hot and lasts, which is part of why pitmasters treat it as the right wood for low and slow work. It runs well in vertical smokers, offset smokers, and large Kamado-style rigs, and we cut every piece to 8, 16, or 18-inch wood splits. Made from natural hardwood we pull from our own land clearing, this post oak wood is sustainably sourced, with much of it coming off Texas land we clear ourselves. Post Oak vs. Red Oak, White Oak, and Live Oak

Oak is not one single type of wood. Post oak is the BBQ-grade member of the family, prized because it burns clean and mild. Red oak is a close cousin, a little stronger in smoke, and a solid choice when you want a touch more punch on red meat. White oak burns dense and hot and shows up more in firewood than on the pit, though it smokes fine in a pinch. Live oak is everywhere in Texas and burns very hot and long, but its heavy smoke and tendency to spark make it better as firewood than as a primary barbecue wood.

For cooking, post oak wins on balance. It gives you the steady heat of a dense hardwood without the heavy smoke you get from live oak or the variability you find piece to piece in mixed red oak. If you have only cooked over red oak or live oak before, the clean profile of true post oak is the upgrade most pitmasters notice first.

Pairing Post Oak with Other Woods

Post oak is the base, and other species are the accents. For a bold flavor on a brisket, add a split or two of mesquite. Mesquite wood burns fast and bold, so a little goes a long way next to mild oak. For a bacon-like depth on pork and ribs, blend in hickory wood. Hickory and post oak are a classic Texas pairing that gives you backbone without going bitter.

When you want sweetness and additional flavor on poultry or fish, reach for fruit woods. A few splits of cherry add color and a mild, sweet note, and cherry plays especially well layered over oak. Apple wood and pecan wood work the same way, lifting a long cook with a softer, fruity edge. Our wood is naturally aged

Our wood is naturally aged in the Texas sun and prior to shipment, it is heat treated to a minimum interior temperature of 160 degrees F for at least 75 minutes as outlined in USDA treatment schedule T314-c. All regulated wood products have been treated in accordance with Texas Compliance Agreement No TDA-538, TDA-534 & TDA-540.

FAQs

Post oak gives off a mild smoke with a clean, lightly woody flavor and none of the sharpness you get from stronger species. That mild flavor is exactly why it is the default for Texas brisket. It adds a steady smoky flavor and a deep bark without taking over the meat. If you have only used bolder wood before, post oak's even flavor profile reads almost subtle by comparison.

Post oak is built for brisket, but it covers a lot of ground. It runs clean on ribs, pork shoulder, sausage, and chicken, and it holds up for any long smoker session where you want consistent wood smoke. Because the smoke is mild, post oak suits red meat and poultry equally, so you can run a mixed cook without one flavor stomping the others.

You can, but they do different jobs. Oak wood chips are thin shavings that flare up fast and burn out quickly, which works for a short cook on gas grills or a charcoal grill. For something between chips and splits, wood chunks smolder longer than chips and suit a kettle, and our 8-inch splits break down into wood chunks if you want that size. Splits burn far longer and feed a steady fire, so they suit a real smoker session and the low-and-slow smoking process post oak is known for. We sell post oak as splits and boxes because solid wood gives you cleaner, longer-lasting wood smoke. If you want to smoke a brisket right, splits are the move.

They are related but not identical. Post oak is the preferred cooking oak because it burns mild and clean. Red oak smokes a little stronger, and live oak burns hotter with heavier smoke, which makes both of them better suited to firewood or a supporting role. For BBQ, true post oak is the type of wood most Texas pitmasters reach for first.

All of our cooked wood is naturally aged and seasoned in the Texas sun and is customized for cooking BBQ. We then flash dry it in the kiln according to the USDA requirements. The wood is treated at a minimum of 160 degrees Fahrenheit for 75 minutes.
